The industrialization of chocolate often stripped the product of its identity. In mass production, cacao production focused on high-yield hybrids, and the chocolate process creation was designed to mask inconsistencies with sugar and additives.
The craft revival is a return to origin. At our farms Blue Valley Chocolate - El Higueron and Blue Valley Chocolate - Llano Azul, we treat cacao as a fine wine. We celebrate the terroir of Upala, allowing the volcanic soil and high biodiversity of our reforested lands to dictate the flavor of the bean.

Our commitment begins at the base of the Tenorio Volcano. On our Half-Day Cacao Farm Tour, guests see firsthand how we manage our orchards. We utilize live demonstrations of harvesting, fermentation, and drying to show that high-quality chocolate starts with a healthy ecosystem and sustainable farming practices.
2. The Factory Transformation
In our factory store in Brasilito, the raw beans are transformed. Unlike industrial factories, our chocolate process creation is transparent and hands-on:

Discovering Chocolate: A 45-60 minute guided tasting journey. Guests learn about the cultural significance of cacao in Costa Rica and taste it at various stages, from fresh juice to roasted nibs.

Chocolate-Making Class: A 2-hour immersive bean-to-bar experience. Guests roast and grind their own cacao, eventually molding three handmade bars to take home.

Bonbon-Making Workshop: An advanced 2-2.5 hour creative workshop where participants learn tempering and molding techniques while experimenting with tropical flavors.
