Rhythms of the Rake: The Art of the Stir

Post-harvest cacao processing has a few dramatic moments — the crack of the machete opening a pod, the aromatic shift when fermentation reaches its peak, the first crack in the roaster that signals a major phase transition. But most of post-harvest is neither dramatic nor instantaneous. Most of it is rhythmic, repetitive, patient, and almost meditative in its demands.

Nowhere is this more true than at the drying beds, where a rake and a pair of hands make the difference between chocolate and compost.

Why Drying Matters as Much as Fermentation

Fermentation gets most of the analytical attention in craft chocolate circles, and rightly so it is where the majority of flavor development happens, where the quality of the finished bar is most fundamentally determined by decisions made on the farm. But drying is fermentation's finishing partner, and the two are inseparable in their effect on what the bean becomes.

A fully fermented cacao bean arrives at the drying beds with a moisture content of approximately 55-60%. The target moisture content for stable storage, transport, and quality roasting is around 6-7%. Getting from one to the other without compromising the flavor development that fermentation created requires slow, even, controlled drying over several days and it requires doing so in a way that does not allow the beans to mold, clump, or dry unevenly.

The Rhythm Itself

Every experienced post-harvest team develops a relationship with the drying beds that is almost physical — a feel for how the beans are moving, how the surface is responding to the day's conditions, whether the interior of the layer is drying at the same rate as the surface.

The rake is a flat-toothed tool, wooden in the traditional form, dragged through the bean layer in slow, overlapping strokes. The motion exposes the inner beans to air, rotates the surface beans to the interior, prevents the formation of a dry crust over wetter material below, and breaks up any tendency toward clumping. It must be done consistently through the active drying hours typically the mid-morning to mid-afternoon window when solar radiation is strongest and the surface temperature of the beans is high enough to drive evaporation without excessive heat stress.

The rhythm of the rake across a full drying bed is not loud or urgent. It is steady. Long strokes, overlapping by a third. A pause to observe the bean surface. Another pass in the perpendicular direction. The sound... a soft, continuous rustling of beans shifting against each other, is one of the characteristic sounds of a working post-harvest facility, unremarkable to the people who make it every day, arresting to anyone who encounters it for the first time.

Reading the Beans

Raking is not merely mechanical. The person working the beds is continuously reading the material in front of them.

Beans that are drying correctly shift in color across the drying period from a deep purple-brown to a progressively lighter, more uniform brown. They develop a slight papery quality to the shell as moisture leaves the cotyledon. They begin to rattle rather than thud when a handful is dropped back onto the bed — the acoustic change is a reliable indicator of moisture reduction and something that experienced post-harvest workers track intuitively.

Beans drying incorrectly tell a different story. A sour or acidic smell at the surface may indicate residual acidity from fermentation that was not given enough time to dissipate. Soft spots in the bean layer suggest uneven drying with interior moisture still high. A whitish powdery surface appearance may indicate the beginning of mold formation, requiring immediate remediation — spreading the affected section more thinly, increasing airflow, and monitoring closely.

All of this information is available to the person raking, through smell, sound, sight, and touch, if they are paying attention. The rake is the instrument. The attention is the skill.


Why Sun Drying Produces Better Chocolate Than Artificial Drying

Industrial and large-scale chocolate production uses mechanical dryers — forced-air systems, drum dryers, or heat-source dryers — that reduce the drying time from several days to several hours. This solves a logistics problem. It also costs something in flavor.

Slow sun drying allows residual acidity from fermentation to continue dissipating through enzymatic and chemical processes that require time to complete. It permits a gradual, even moisture reduction that does not stress the bean's cellular structure. It exposes the beans to a daily temperature cycle, warming through the day, cooling overnight under cover that appears to influence the final flavor profile in ways that rapid artificial drying does not replicate.

The difference is not dramatic on every batch. But across a full season of beans dried slowly on raised beds in the Upala sun, compared to the same beans rushed through a mechanical dryer, the slow-dried product carries more clarity, more top-note complexity, and a cleaner finish. The rake, and the days of patient work it represents, are in the bar.

The Patience the Market Does Not Value

There is an economics argument for mechanical drying that is difficult to refute at scale: it takes days of skilled labor off the production timeline, frees up drying infrastructure for the next batch, and reduces weather-dependency in the drying process. All of that is true.
