Seven percent does not sound like very much. Seven percent of a number is usually the rounding error, the margin, the thing you account for and then ignore. But in the world of cacao post-harvest processing, the difference between 14% moisture content and 7% moisture content is the difference between a batch of beans that will mold in a shipping bag within weeks and a batch that will arrive at its destination with its flavor intact, stable, and ready for the roaster.
Getting from fermented to shelf-stable is a journey measured in percentage points and sunlight hours. And at Blue Valley Chocolate, that journey runs between two of Costa Rica's most climatically distinct landscapes.

Why Moisture Is Everything
A freshly fermented cacao bean arrives at the drying stage with a moisture content somewhere around 55-60%. At that moisture level, the bean is biologically active — the fermentation is winding down, but microbial activity is still present, enzymatic processes are continuing, and the cellular environment inside the bean is still in flux.
This is actually desirable, briefly. The period immediately after fermentation, when the beans are still moist and the enzymatic reactions are continuing as the temperature drops, contributes to flavor development in ways that are not fully replicable by any artificial drying process. The acids produced during fermentation continue to dissipate. The flavor precursors continue their slow chemical evolution. The beans are finishing what fermentation started.
But this period must come to an end. A bean that stays above 8% moisture for too long is a bean at risk — of mold growth, of flavor degradation, of the acetic acid notes that should have dissipated becoming permanently embedded in the flavor profile. The target of 6-7% moisture content is not arbitrary. It is the threshold below which microbial activity effectively ceases, enzymatic reactions slow to negligible rates, and the bean is chemically stable enough to be transported, stored, and roasted without further change.
Getting there requires sun, air, time, and the right climate to work with.
The Problem With Drying in Upala
Upala receives some of the highest annual rainfall in Costa Rica. This is precisely why the cacao grown there is extraordinary — the volcanic soil and abundant moisture produce the growing conditions that make fine-flavor cacao possible at Finca Blue Valley. But it creates a fundamental tension in post-harvest drying: the same climate that grows exceptional cacao is also one of the least favorable in the country for sun-drying it.
During the Northern Zone's wet season, reliable multi-day windows of strong sun are rare. Cloud cover reduces solar radiation to the drying beds. Overnight humidity slows the evaporation that the afternoon sun achieved. The beans must be covered against moisture each evening and uncovered each morning, extending the drying period and requiring constant monitoring of a process that, in a drier climate, would proceed with considerably more predictability.
The Tenorio Volcano corridor brings its own particular humidity patterns. The cloud forest system to the south and east of Finca Blue Valley generates morning mist that moves through the farm on many days. The afternoon breeze from the volcanic uplands helps, but it is not the sustained, low-humidity airflow that rapid, even drying requires.
At Finca Blue Valley Chocolate and El Higueron, we manage these conditions through careful bed design, diligent monitoring, and cover systems that protect the beans overnight. And we sometimes bring the beans to where the sun is more reliably available.

The Journey to Guanacaste Sun
The Pacific coast of Guanacaste — where our factory sits in Playa Brasilito — operates under one of Costa Rica's most reliably dry dry-season climates. The Guanacaste dry season, running from November through April, produces day after day of strong Pacific sun, low humidity, and the kind of sustained solar radiation that sun-drying cacao genuinely requires. The contrast with the Northern Zone's more complex humidity pattern is stark, and it is climatically useful.
For select batches, particularly during the transition between the wet and dry seasons in Upala when drying conditions are most variable, we complete the drying process at our Brasilito facility. The beans arrive partially dried from the farm — fermentation complete, initial moisture reduction underway — and finish their journey to 7% on the Pacific coast, under a sun that the Northern Zone simply cannot provide with the same consistency.
This is not a workaround or a compromise. It is an intentional use of Costa Rica's geographic diversity, two landscapes working in sequence, each contributing what it does best. Upala provides the growing conditions that make the beans extraordinary. Guanacaste provides the drying conditions that lock that quality in.
Why 7% Is Worth Chasing Across a Country
The number itself is technical. What it represents is not.
A bean that arrives at the roaster at 7% moisture has completed its post-harvest journey correctly. Its flavor precursors are intact. Its acid content has dissipated to the level that will produce a clean, complex finished bar rather than one carrying residual sourness from incomplete drying. Its cellular structure is stable, ready to respond predictably to the heat of the roast rather than steaming unevenly from excess moisture inside the bean.
The roaster at Blue Valley can feel the difference in a batch of beans that made it to 7% properly versus one that did not. The sound in the drum is different. The smell in the early roast is different. And the flavor of the finished bar — the thing you taste when you open our collection — is the downstream consequence of every decision made during those drying days, including the decision to bring the beans to where the sun is strong enough to finish the job correctly.
Seven percent. It runs from Upala to Brasilito, and it matters every time.
