Walk into any industrial chocolate facility and the overriding impression is of cleanliness surfaces wiped, waste streams managed, every material that leaves the production line accounted for and disposed of efficiently. That cleanliness is, in part, a genuine operational requirement. It is also a signal about what is valued: tidiness, standardization, the elimination of anything that does not directly serve the product being made.
A working cacao farm and small-batch factory operates on a different philosophy, and nowhere is that difference more visible than in how cacao shells, the dried outer skin of the fermented, roasted bean are treated. In the industrial model, they are a waste stream. In ours, they are a secondary product, a soil amendment, a beverage ingredient, and an ongoing argument for why the messy, whole-plant approach to cacao produces something that the tidy version cannot.
What Cacao Shells Actually Are
When a fermented, dried cacao bean is roasted, the outer shell dries out further, becomes brittle, and separates naturally from the cotyledon inside. In the industrial process, this shell is removed by a combination of cracking and winnowing: the bean is cracked, air is blown through the fragments, and the lighter shell pieces are separated from the heavier nib. The shells are collected as a byproduct, typically composted or discarded, occasionally sold in bulk.
In a craft operation like ours, the shell arrives at the winnowing stage carrying something that industrial processing does not fully account for: flavor. The roasted cacao shell has a complex aromatic profile, lighter and more herbal than the nib itself, with notes of dried cocoa, a subtle bitterness, and a round, warm quality that translates remarkably well into hot water. Which is to say: it makes an excellent tea.
Cacao Shell Tea: The Drink That Deserves More Attention
Cacao husk tea is sometimes called cascara de cacao, in parallel with the coffee cherry tea known as cascara and is prepared simply. The roasted shells are steeped in hot water, either loose or in a muslin bag, for several minutes. What emerges is a light, warm, chocolatey-herbal drink that contains theobromine from the residual cacao compounds in the shell, along with a meaningful polyphenol contribution. It is caffeine-light, warming, and genuinely pleasant in a way that most people who encounter it for the first time describe as a surprise.
The theobromine content in cacao shell tea is lower than in whole beans or finished chocolate, but it is not negligible — and for people who want a warm beverage with a gentle, sustained alertness rather than a caffeine spike, it occupies a useful position somewhere between herbal tea and a light drinking chocolate. It also happens to be, calorie-wise, essentially nothing — a useful characteristic for people who love the flavor of chocolate but want to separate it from the sugar and fat of the confection.

The Shell as Soil Amendment
Beyond the cup, cacao shells have a second life in the farm itself. The hulled shells from our roasting operation are returned to Finca Blue Valley in Upala, where they serve as a mulch and soil amendment in the cacao rows.
The shells decompose slowly, providing a carbon-rich organic layer that retains moisture in the soil between rain events, suppresses weed growth without any chemical intervention, and feeds the soil microorganism population as they break down — contributing to the same mycorrhizal soil biology that makes our volcanic growing conditions so productive. The nutritional content of cacao shells includes meaningful quantities of potassium, magnesium, and phosphorus the same minerals that the cacao tree pulls from the soil to grow, returned to the soil to feed the next generation of growth.
This is a closed-loop system in the most literal sense. The tree grows in soil partially fed by the shells of previous harvests. The shells of the current harvest will feed the soil for the next. Nothing that the cacao plant produces leaves the system without returning to it.
Cacao Pod Husks: The Other Shell
A distinction worth making: the cacao shell discussed above is the thin outer skin of the individual bean, separated during winnowing. The cacao pod husk is the thick outer wall of the pod itself — the structural exterior that surrounds the twenty to forty beans inside. These are two different parts of the plant, and both have uses.
Pod husks are larger, woody, and decompose more slowly than bean shells. At Finca Blue Valley, they are composted directly in the rows where the pods were harvested, providing an immediate organic matter contribution at the base of the trees. Some producers are now exploring pod husk as a feedstock for biogas generation, animal feed, or even construction material, the fibrous, woody structure of a dried pod husk has genuine mechanical strength.
The entire cacao plant, from root to pod wall to bean shell, is useful. The messy reality of a farm that keeps all of it in play is a feature, not a design flaw.

What to Do With Cacao Shells at Home
Our collection includes our core chocolate bars, but the philosophy behind the shells is something you can practice at home with any roasted cacao product. Request shells from a craft producer who uses single-origin beans — some sell them directly. Steep a small handful in 300 ml of hot water (not boiling, around 80°C) for five minutes. Taste it plain before adding anything. Note the warmth, the light chocolate aroma, the absence of sweetness. Add a pinch of cinnamon or cardamom if you prefer.
