In the 19th and 20th centuries, titans like Cadbury revolutionized the world with "Cocoa Athletes" and the democratization of sweets. They brought chocolate to the masses. However, in that rush toward industrialization, the connection to the land, the complexity of cacao production, and the health of our biodiversity were often sidelined.

Today, we are in the midst of a new revolution. This isn't about mass production; it’s about purity, transparency, and an unwavering organic commitment. At Blue Valley, we are leading this movement from the lush landscapes of Costa Rica. We are moving away from the "candy bar" era and returning to the "fine chocolate" era, where the master chocolatier is once again a steward of nature.

The early chocolate brands of Europe built empires by refining the chocolate process creation for speed and shelf-life. While we owe them for inventing the modern bar, the industrial model prioritized "bulk cacao", beans chosen for their high fat content and resilience rather than their flavor profile.

This era relied on heavy processing and additives to mask the lack of quality in the base ingredient. In contrast, the modern movement led by Blue Valley Chocolate views the cacao bean not as a commodity, but as a fine fruit. Our purpose-driven team is dedicated to reversing the industrial trend by focusing on artisanal craftsmanship and ethical farming.

We operate two distinct cacao farms: Blue Valley Chocolate - El Higueron and Blue Valley Chocolate - Llano Azul. Here, we don't just grow cacao; we practice a philosophy of "purity."

1. The Power of Terroir and Biodiversity

Unlike industrial giants, we embrace the biodiversity of our land. Our farms are located at the base of the Tenorio Volcano in Upala, where the soil is rich with minerals. By maintaining reforested areas and sustainable farming practices, we allow the natural environment to dictate the flavor. When you taste our single-origin bars, you are tasting the rain, the volcanic earth, and the surrounding flora of Costa Rica.

2. Radical Transparency in the Chocolate Process Creation

The "Chocolate Wars" of the past were won through secret recipes. We believe the future is won through transparency. In our Chocolate-Making Class at our factory store in Brasilito, we invite guests to see exactly how the magic happens.

  • Roasting & Grinding: We show you how to roast and grind cacao to preserve its organic integrity.

  • Tempering: Our master chocolatiers teach the delicate art of tempering to create a snap and sheen without the need for stabilizers.

  • Personalization: Each guest takes home three handmade bars, often infused with local seasonal flavors.


Bridging the Gap: Education as the Ultimate Weapon

To win the war against low-quality, unethical chocolate, we must educate the palate. We offer several "Experiences" designed to transform how people perceive this ancient food:

  • Discovering Chocolate (45-60 mins): A guided tasting journey through the world of cacao. Guests learn about the origins of the bean, its cultural significance in Costa Rica, and taste the fruit at different stages from whole beans to fresh juice.

  • Chocolate-Making Class (2 hours): A hands-on, bean-to-bar experience where you refine chocolate into the bars you mold and take home.

  • Bonbon-Making Workshop (2-2.5 hours): An advanced workshop for those who want to master the creative techniques of filling and decorating tropical bonbons.

The Farm Tour: Seeing the Purity Firsthand

The front lines of our commitment are in Upala. Our Half-Day Cacao Farm Tour is a deep dive into the origins of chocolate.

  • Sustainability in Action: Guests take a guided walk through cacao orchards and reforested areas while learning about sustainability and reforestation.

  • Live Demonstrations: We show the hard work of harvesting, fermentation, and drying, the stages where the true quality of fine aroma cacao is protected.

  • The Reward: The tour concludes with a vegetarian farm lunch served in a shaded rancho.
