In the world of industrial confectionery, "chocolate" has become a loosely defined term, often stretched to include emulsifiers, artificial flavorings, and excessive fats that mask the true nature of the bean. As a chocolate master and the founder of Blue Valley Chocolate, my philosophy is the opposite: I believe that true excellence lies in what we leave out.
Our "No-Additive Standard" is more than a production choice; it is a commitment to the purity of Costa Rica's natural resources. By focusing on the intrinsic quality of our cacao production at Blue Valley Chocolate - El Higueron and Blue Valley Chocolate - Llano Azul, we allow the authentic, complex profile of fine aroma cacao to speak for itself.
The Chemistry of Purity: Why Less is More
Most commercial chocolate brands use lecithin to speed up processing and vanillin to create a uniform taste. At Blue Valley, we reject these shortcuts. Our chocolate process creation relies on time, temperature, and the skill of our master chocolatiers to achieve a silky texture and balanced flavor.
When you remove additives, the quality of the soil and the health of the tree become paramount. This is why biodiversity is at the heart of our mission. Our farms in Upala, situated at the base of the Tenorio Volcano, provide a mineral-rich terroir that produces beans with naturally occurring notes of tropical fruit and caramel. Adding anything else would simply be an insult to the landscape.
The Blue Valley Chocolate Process: From Tree to Bar
We lead a revolution in fine chocolate by combining artisanal craftsmanship with cutting-edge technology. Our purpose-driven team ensures that every bar meets our rigorous standards for purity.

1. Sustainable Harvesting and Fermentation
The journey begins at our working cacao farm in Upala. We practice ethical farming and reforestation, creating a sustainable ecosystem where cacao thrives. During our Half-Day Cacao Farm Tour, guests witness the live demonstrations of harvesting and fermentation—the natural biological process that develops flavor without the need for chemical enhancers.
2. Crafting at the Brasilito Factory
Once the beans are dried and transported to our factory store in Brasilito, the transformation into pure chocolate begins.
-
Roasting and Grinding: We roast in small batches to highlight the unique single-origin profile of the beans.
-
Refining: We grind the cacao until it reaches a microscopic smoothness, relying on the bean's own cocoa butter for luxury and mouthfeel.
-
Tempering: Our master craftsmen use precise temperature control to stabilize the chocolate, giving it a brilliant sheen and a crisp snap.
Experience the Difference: Workshops and Tours
We believe that once you taste pure, additive-free chocolate, there is no going back. We invite you to explore this purity through our immersive experiences and chocolate workshops:
-
Discovering Chocolate (45-60 mins): A guided tasting journey through the world of cacao. You will taste cacao at different stages—whole beans, fresh juice, and roasted nibs—to understand how flavor evolves naturally.
-
Chocolate-Making Class (2 hours): Become a student of the craft. Guests roast and grind cacao, then refine it into pure chocolate bars to take home. It is a hands-on bean-to-bar experience that emphasizes the artistry of balancing flavors.
-
Bonbon-Making Workshop (2-2.5 hours): For a more creative challenge, join our advanced workshop to craft filled chocolates and bonbons using tropical flavors and expert tempering techniques. (Requires 7 days' advance notice) .
A Vision for Sustainable Gastronomy
Our mission is to create the world’s most sustainable chocolate by blending global expertise with local talent. This commitment extends to our Referral & Commission Program, where we work with travel partners to share the authentic taste of Costa Rica with the world.
By adhering to a no-additive standard, we protect the integrity of the bean and the health of our consumers. We invite you to visit us in Brasilito or join us for a deep dive at our farm in Upala to see how purity is defined.
