Cacao beans naturally contain about 50 percent cocoa butter. When ground, this fat creates a thick paste known as chocolate liquor. Without a method to separate cocoa butter from solids, controlling texture was difficult.

Chocolate as a solid confection was rare and challenging to produce.

The future of chocolate required mechanical innovation.


The Invention That Changed Everything

Van Houten’s hydraulic press separated cocoa butter from ground cacao mass.

By applying pressure, the machine extracted much of the cocoa butter, leaving behind a compressed cake of cocoa solids. These solids could then be pulverized into cocoa powder.

This breakthrough achieved two critical outcomes:

  • It made cocoa beverages smoother and more consistent.

  • It allowed chocolate makers to recombine cocoa butter and solids in controlled ratios to create moldable, solid chocolate.

For the first time, texture became manageable.
