  1. Sight: Examine the bar. A high-quality craft chocolate should have a glossy sheen and be free of "bloom" or gray streaks. This indicates that the master chocolatiers have achieved a perfect temper.

  2. Sound: Break a piece off. You are looking for a sharp, clear "snap." This is the sound of well-aligned cocoa butter crystals and a sign of premium chocolate.

  3. Touch: Run your finger over the surface. It should feel smooth, never waxy. As you place it in your mouth, notice how quickly it begins to melt. Pure cocoa butter should melt at just below body temperature.

  4. Scent: Before you taste, rub the chocolate slightly to warm it and then bring it to your nose. You might pick up the scent of the tropical fruit trees or volcanic earth that define our cacao production at the base of the Tenorio Volcano.

  5. Taste: This is the finale. Do not chew. Let the chocolate sit on your tongue and melt slowly.

Identifying the Flavor Profile

Training your palate is about learning to name what you are sensing. Fine aroma cacao is famous for its diversity. As the chocolate melts, look for the "beginning, middle, and end" of the flavor journey.
