In Costa Rica, where the Maleku and other indigenous groups have cultivated these beans for centuries, the distinction is clear: one is a sacred plant medicine, while the other is a processed confection.

1. The Processing Gap: Raw vs. Roasted

The journey begins with the temperature. Cacao is typically cold pressed and fermented at low temperatures, which preserves the living enzymes and the complex molecular structure of the antioxidants. Chocolate, on the other hand, is often roasted at high temperatures and undergoes Dutch processing (alkalization).
